Whole Wheat Pancakes with Apple Cider Syrup
- 1 cup all-purpose flour
- ½ cup whole wheat flour
- ½ cup wheat bran
- 1 tablespoon baking powder
- 2 teaspoons baking soda
- 4 tablespoons sugar
- ¼ teaspoon salt
- 3 eggs
- 1 ¾ cups fat free buttermilk
- 2 teaspoons vanilla
- 2 tablespoons canola oil
- Fresh strawberries and powdered sugar for serving
Combine the flours, wheat germ, baking powder, baking soda, salt , and sugar in a medium bowl. Stir with a whisk to mix well. In a measuring cup, combine the milk, eggs, and oil. Stir with a whisk to combine.
Pour the egg mixture into the flour mixture. Stir it gently until smooth.
Heat a large skillet or griddle over medium heat. Spray it with cooking oil spray or use canola oil and/or butter. Use a ¼ cup measuring cup to pour the batter onto the skillet or griddle. Cook the pancakes for 3-4 minutes on first side, or until small bubbles appear on top. Turn the pancakes over and cook 2 minutes longer, until they are golden brown.
Syrup
- 1 quart of Apple Juice
- 1 cup of brown sugar
- 1 stick of butter
- Corn Starch mixed with a little of the apple juice to thicken to desired consistency
If you would like, serve with Applewood thick sliced bacon too.
